Local Southwest’s thickest, most dense ‘top of the line’, traditional barrel-aged balsamic vinegar from Modena, Italy. It is made from acetified grape must & aged using the Solera method of blending, transferring the vinegar between a succession of high quality barrels of different woods & sizes. A reduced, rich and assertive balsamic with a warm, glossy brown color and a thick, fluid consistency. Undertones of Port and Madeira undertones, it is a classic balsamic taste.
We call it Barrel 25 to give people in the United States a sense of the age of the vinegar.
